Cheese and Veg Bake - Ingredients: 4 cups cauliflower florets approximately 2 small-medium heads of cauliflower 1 punnet 250g mushrooms, quartered 1 large red pepper seeded and chopped into bite-size chunks 1 large yellow pepper same as red pepper 1 red onion peeled and chopped into chunks 2 tablespoons olive oil I used basil flavored large pinch salt black pepper to taste 2 cups cheese sauce 1 cup grated mozzarella for topping grated parmesan optional Instructions Pre-heat the oven to 200°c. Place all the vegetables on a baking sheet then drizzle with the oil, season with salt and pepper and toss to coat. Place in the oven and allow to roast for 30 minutes until golden brown and starting to caramelise. Transfer the roasted vegetables to a suitable baking dish and pour over the cheese sauce. Add the mozzarella and parmesan then place back in the oven for 20 minutes or until the cheese has melted and is golden brown. Remove and allow to rest for 5 minutes before serving.

KEEP IT SIMPLE STUPID In terms of improving your health and fitness, its best to KEEP IT SIMPLE! There are no short cuts- you have to put the hard work in. This usually involves making lifestyle changes, tweaking priorities and BEING CONSISTENT. Looking to lose a bit of body fat? You need to be in a calorie deficit (burning more calories than you're consuming). Make sure you're eating a balanced diet with sufficient protein and focus on trying to get as much veg and wholefoods into your diet as possible to help with improving overall health. Look at limiting your intake of junk food and alcohol and ensure you're drinking plenty of water. Looking to improve strength/fitness? Set yourself a realistic weekly 'plan' and follow it consistently. Aim to push yourself a little more each week to ensure you're slowly progressing. Stick to basic exercises and slowly progress them by increasing weight/reps/sets/less rest etc. Try and plan your sessions rather than walking into the gym and doing random workouts, this often leads to random results. Try not to get drawn into the conflicting information that social media provides us with, many people post health and fitness advice with no actual qualifications or experience in the industry. It's very easy to scroll through your social media feeds and be bombarded with all sorts of quirky exercises and fad diets. Stick to the basics and do the basics consistently and you'll see results. We have my Mama for our guest after her scheduled flight out to visit & stay with my older sister and her family was moved. My brother-in-law offered I fly & accompany her to HKG until her next forward flight. And while it's an exciting idea to visit HKG again, we knew it was much convenient & safer to stay in MNL instead. --- Thankfully those flights did not happen as Mama got a stomach bug and the thought of her on transit or being in another country nursing her would be difficult. We have checked out of the hotel we stayed near the airport and she is now staying with us until her next flight. It is much better to nurse someone at home than in a hotel room afterall. This is the first full meal she had since her 2 day stomach bug ordeal. --- Oven-cooked lightly seasoned milkfish, cucumber salad and red rice which she happily consumed after only eating apple and/or congee the day before & nothing the day before that. --- She now feels much better, watches her fave shows and trying regain her strength by sleeping in. I think it's now okay to take her out so she won't feel cocooned in and starts getting cranky. 😅

Moong Dal tomato gravy based using Kasoori methi . Kasoori methi moong dal is the most easiest and tastiest dal which can be cooked in say about 15-20 min max , which at my home is cooked frequently , it’s winter so fresh methi leaves are available , but when out of season we use this dried methi leaves which is known as kasoori methi as flavor condiment . This dal is nutritionally rich and goes well with rotis , parathas , plain rice or jeera rice . I have used @orikaspices Kasoori methi and it was so aromatic when I cooked the aroma of it was around my kitchen .
