Well.. if I don’t say so myself I highly recommend the lunch I had today! Weight watchers wrap with pesto, 1 turkey rasher, 1 slice of cooked ham and 30g of Brie. I fried the rasher and then put it all in the oven for 10 minutes for the wrap to be crunchy and for the Brie to melt.

KATSU CURRY TOFU BOWL 🍛🥦✨ This vegan friendly protein and nutrient packed meal is a great fix for quick lunch or dinner and it’s delicious 😋 ** If you’re not a fan on tofu you can always swap it for a different protein source 💪🏼 Ingredients: * Firm Tofu Block (around 1/3) * Rice of choice * Vegetables of choice * Sesame seeds (optional) * Soy Sauce * Katsu Curry Sauce * Oil of choice for frying * Sesame oil (optional) Method: 1. Boil the rice and prepare the vegetables (I used broccoli, cucumber and red cabbage). 2. Drain and press the tofu to reduce the moisture content, then cut it up into bite size pieces and drizzle over some soy sauce to add flavour. 3. Use about 1/2 tablespoon of oil and fry the tofu until it is golden brown on all-over. 4. Add in the curry sauce (I used YO Sushi sauce) and simmer for 1-2 minutes. 5. Finally assemble the bowl, sprinkle over some sesame seeds and enjoy ! ** Optional Step: to make the rice more flavourful I recommend mixing in a dash of sesame oil and soy sauce for a subtle nutty taste 🥜.

Happy Monday everyone! I will be soon sharing what I’ve learned so far organisation-wise in these two (almost three) months of doing everything from home, that is working, taking care of my family and myself. One of the most important things to me was to maintain a healthy diet. It’s true that it can quickly get hectic and we tend to grab quick fix that’s not very good for us. So I learned to fix myself quick meals that I can prep the night before and that are both delicious and nutritious. For example I would make a quick stew (meat optional, I just happened to have it in the freezer) with celery, carrots, potatoes, black beans and tomato sauce. Really everything that you feel can mix well from your pantry and fridge. I added a spoon of olive oil, a drizzle of worcestershire sauce, some oregano and black pepper. Done! I distributed equal portions into tapperwares and served with some greens (I had kale) and nutritional yeast! It was delicious and filled me with all the nutrients I needed! Fast, easy and healthy! Grab the idea and mix your own favorite foods!
